The impact on the health of farmers and other professionals who come into contact with certain pesticides has now been established. But what about the long-term impact on public health of the pesticide residues to which we are exposed through our daily diet (individual substances and mixtures) ? Does eating organic food reduce the risk of certain chronic diseases ? Beyond the impact of our food on human health, what is its impact on the health of the planet, and is it possible to move towards more sustainable diets ?
